Ingredients

  • Half an onion
  • One can diced tomato
  • One cup beef broth
  • 1/4 cup cream
  • Crushed red/Thai pepper
  • Salt & Pepper, Basil, to taste

Prep

  • Cook onion in a pot until just short of caramelized.
  • Add broth to the pot. Cook until simmering.
  • At this point either add tomatoes to the pot and use immersion/hand blender to blend OR add tomatoes and contents of pot to blender. Blend until few chunks remain.
  • Simmer for a few minutes, add cream.
  • Simmer a few more minutes, then spice to taste.
