Ingredients
- Half an onion
- One can diced tomato
- One cup beef broth
- 1/4 cup cream
- Crushed red/Thai pepper
- Salt & Pepper, Basil, to taste
Prep
- Cook onion in a pot until just short of caramelized.
- Add broth to the pot. Cook until simmering.
- At this point either add tomatoes to the pot and use immersion/hand blender to blend OR add tomatoes and contents of pot to blender. Blend until few chunks remain.
- Simmer for a few minutes, add cream.
- Simmer a few more minutes, then spice to taste.
